Our cooking starts in the garden

 

Our project began in 2023, when we had the opportunity to take over a piece of land in the neighboring town of Aia. Our vision was to transform it into the heart of a future restaurant. Over the past years, we've taken the time to explore, adapt, and reforest this land.

 

Today, we have an edible forest filled with fruit trees, a vegetable garden, and beehives. This, allows us to bridge the gap between nature and the table, while exploring responsible production and sustainable consumption in our profession.

 

At Etxemaite, we also strive to offer our guests, products from local farmers, winegrowers, shepherds, and fishermen; producers who share with us the same values and love for their craft.

 

Our goal is to provide our guests with delicious food, cooked with care, using the best ingredients our region has to offer.
